Summer Chillin’ Blog Hop – No bake cheesecake!

I was initially going to post the recipe for my savory zucchini cake, but then remembered I hardly had any of that last summer, while I made my cheese cake at least once a week (and there were only two desert-eating adults in the house)
So here is my go-to recipe.
You’ll need:
300 gr cream cheese (I use Philadelphia)
300 gr light whipping cream (30% fat)
200 gr confectioner’s sugar (you can use more or less, depending on how sweet you want it)
1 (250 gr) pack digestive biscuits
150 gr softened butter
Jam or chocolate syrup* to taste.
A 30 cm round pan—preferably one of those removable bottom ones. An electric whisker will make your life easier.

NOTE: You can also serve individual portions in glasses or muffin cups. 

Step 1.
Crumble up the biscuits with your hands and mix in the butter (using a fork also works, but is less fun). The butter can also be melted beforehand for ease, but the end result isn’t as…fluffy. More butter will make the mixture harder and crispier once it’s cold.
Using a spatula or spoon, cover the bottom of the pan with it.
Step 2.
Whip up the cream and sugar till it can stand, then add the cream cheese and keep whipping to make it light and frothy. It takes about 3 minutes. Be careful not to overdo the whipping, or the cream will curdle. When it’s sticky enough not to fall from the spoon, it’s ready.
Poor over the biscuit/butter mixture in a smooth layer. Leave it in the refrigerator to chill for at least an hour before you add the topping.
Step 3.
Cover the desert with jam of your liking (my favorite is strawberry) or chocolate syrup. If you can wait, put it back in the fridge; it needs to stand and set before it can be properly sliced.

So there you go, you have your perfect no-bake cheese cake. It’s creamy, it’s cheesy, it’s smooth, it’s fruity, and chillin’. Nothing better for a summer day. But there’s one more step, and this is the most important one: 

Step 4.

Do NOT taste the cheesecake unsupervised, or you’ll end up eating all of it.

I’m setting this entry to auto-post, and don’t have the ingredients or time to whip up my own cheesecake because I’m about to leave on a two week (and then some) vacation, so I’m cheating a bit.     I've made a similar no bake cheesecake before but it was plain. I think I'll like the chocolate better. Thanks for sharing!
